Food Production

Hospital food production is a complicated process which requires cooperation between all hospital staff. However, there is increased competition in the healthcare industry and the patients increasingly have better knowledge about food and nutrition and to help them to understand the quality of food service. Hospital food generally has a poor reputation despite recognition of the importance of good nutrition in patient recovery from illness. Improving food service quality in hospitals remains an underexplored issue and a difficult challenge because it includes both tangible and intangible issues. The delivery of a catering service in hospitals has become another challenge for overstretched hospital budgets as hospital managers struggle to deliver high-quality food service to patients.

Agriculture is integral to rural landscape which is understood to have resulted from the interaction between humans and nature, also termed cultural landscape (Rapoport, 1992). The village is a rural morphology that is historically tied to food production and a rural landscape. However, two phases of migration impacting on the village-firstly, under state socialism and secondly, in the recent post-communist era-have radically altered its agricultural function and the associated rural landscape as setting of the village. The scope of this chapter is on the rural landscape of Eastern Europe and the Balkans in particular (Figure 8.1). The latter region contains Albania, Bulgaria, former Yugoslavian states, and Romania (Turnock, 1997: 6). This chapter is structured in two parts. The first examines the process of collectivisa-tion and the formation of cooperatives as the socialist model to bring the villages and food production under the framework of centralised government. The discussion focuses on policies and programmes in that period of communist and socialist history that altered organisational structures and methods of food production, and changed the types of crops produced. The second part of the chapter elaborates on the detail and specificity of one village, Zavoj, in the Republic of Macedonia, to examine how ties between the village and agriculture were altered by migration from the village. By detailing the human story of the mountainous landscape and village of Zavoj, and the effect on human lives related to the rural landscape and food production, this second part complements the overview background of the chapter.

Environmentally transformative human use of land accelerated with the emergence of agriculture, but the extent, trajectory, and implications of these early changes are not well understood. An empirical global assessment of land use from 10,000 years before the present (yr B.P.) to 1850 CE reveals a planet largely transformed by hunter-gatherers, farmers, and pastoralists by 3000 years ago, considerably earlier than the dates in the land-use reconstructions commonly used by Earth scientists. Increasing food production without further harming biodiversity is a key challenge of contemporary societies. In this paper, we assess trade-offs between agricultural output and two key agri-environmental indicators in four contrasting scenarios for Europe in 2040. The scenarios represent different storylines encompassing assumptions on macroeconomic drivers (e.g. population and GDP growth rate), demand for food and livestock products as well as policy choices on trade liberalisation/protectionism, biodiversity conservation, regulations on land-use planning and subsidies to farmers through the European Union (EU) Common Agricultural Policy (CAP). Through a complex modelling chain, we projected for the year 2040: i) the total energy content of agricultural output; ii) the total nitrogen surplus, a proxy of the overall impact of agriculture on the environment; and iii) an index measuring the capacity of agricultural systems to support biodiversity. We present both aggregate results (EU level) and spatially explicit assessments at a fine resolution (1 km 2). Results indicate that a strong neo-liberal approach to agriculture (full liberalisation, abolition of subsides) will lead to increased use-input efficiency and decrease of impact from Nitrogen input; however, a large amount of agricultural area in Europe will be abandoned , which will lead to an absolute decrease in production and increased land homogenisation and polar-isation, with negative effects on the capacity of agricultural areas to support biodiversity. Protectionist and sovereigntist policies will keep absolute production and cultivated area high, but at the cost of less efficiency in the use of inputs and higher impacts on the environment and biodiversity. Under a scenario characterised by environmental-friendly practices, multifunctional landscapes and localism, significant decreases in the environmental pressure of agriculture (compared to other scenarios) can be achieved with minimum decrease in agricultural output. Our results indicate that agricultural and land-use policies aiming at preserving production over large rural areas, multifunctionality and diversification of agricultural landscapes can contribute to the jointly achievement of biodiversity protection and high food production.

Agricultural production (cultivated terrestrial plants grown for nutritional, material and energy provision) is recognised as being a main provisioning ecosystem service. Nevertheless biomass obtained through agricultural activities is not a mere product of natural ecosystems, but requires substantial human input to be obtained. This report presents a further development in disentangling the nature and anthropic contributions to agricultural biomass production by means of energy flows. We identify and quantify the respective natural and human energy inputs into main cropping systems in Europe. The energy quantification is based on the emergy concept, which is the energy needed, directly
and indirectly, to make a product. Natural components include sun radiation energy, wind, rainfall, flowing water and groundwater, and topsoil. Human components consist of purchased inputs (e.g. fertilizers, machinery) and human labour. Overall, the emergy results show that the energy used to produce biomass in cropping systems mainly originates from human inputs, particularly from the use of artificial fertilisers and ploughing and tilling, and overall is higher in cropland than in grasslands. By applying the emergy concept we are able to assess the intensity of farming management practices. Emergy helps, therefore, to analyse the provisioning ecosystem services derived from agriculture considering the intensity of their production system. At the same time, it offers a new
approach to identify ways to achieve a maximum crop yield considering the balance between natural and human resources, and therefore support resource efficiency in agricultural production. The outcomes of this study should be considered as a first methodological approximation based on the available data and models.

PROLOGUE

As a university student, it is in everyone’s dream to learn overseas in order to enhance and broaden their horizon and knowledge, especially in their field of expertise. In my case, they are food and agriculture. I am honored and grateful that I got my chance in such occasion through Experience Japan Program 2016. In this program, we studied and analyzed the problem in our food society from the point of views of farmer, food entrepeneur, and businesses. From the government’s point of view, we only had a chance to study from cases and stories. While form the point of view of the customer, well, we had a chance to actually be one and dwell in deep in the experience as one.

During our stay in Japan, we visited at a total of 14 distinct places that are significant about their food experience, which were 8 places in Tokyo and another 6 in Minami Aizu. Even with the plethora of places we visited, it was not enough to entirely represent the whole situation regarding the aforementioned food problems in Japan. Even so, it was enough to describe the difference within the soul and characters of the food within the inner metropolitan city of Tokyo and the rural village area of Minami Aizu.

This report will take its chance to retell the stories from those places to answer some of the most crucial questions regarding food: how come food becomes so unique even when they came from the same vicinity? Why is food so important? How can we ever live without food? And most importantly, does food hold an important keystone in our ability to sustain life as we know it?

This paper offers guidelines and best principles to guide our approach to future global agriculture and food production. The 20 principles outlined in this paper incorporate consideration for environmental, economic, ethical, political, and human rights issues.
